font-family: Verdana;\">1<span style=\"mso-tab-count: 1;\">\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span>can (32 oz.) black beans, drained and rinsed<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">1<span style=\"mso-tab-count: 1;\">\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span>can (32 oz.) diced tomatoes<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">water<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">salt to taste<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">cilantro for garnish<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">Bake or microwave the sweet potatoes just until tender\/firm, about 3 to 4 minutes per potato in the microwave.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>When cool enough to handle, peel and cut into \u00be inch dice.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Set aside.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">Heat the oil in a large skillet.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Add the onion and garlic and saut\u00e9 over medium heat until golden.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Stir in the cumin, and oregano, hot chilies, and bell pepper.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>After one or two minutes, add the tomatoes and\u00a0black beans.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Cover and simmer gently for 15 minutes.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>Finally, add the sweet potatoes and continue to simmer until the vegetables are tender \u2013 about 10 to 15 minutes, adding water to achieved the desired consistency.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">Season lightly with salt.<span style=\"mso-spacerun: yes;\">\u00a0 <\/span>If time allows, let it stand off the heat for 1 or 2 hours, then heat through to serve.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt; font-family: Verdana;\">Garnish with chopped, fresh cilantro.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-size: 11pt;
