{"id":4049,"date":"2012-01-13T23:40:59","date_gmt":"2012-01-14T06:40:59","guid":{"rendered":"https:\/\/astrowin.org\/rffriends\/wpx\/?p=4049"},"modified":"2012-01-14T00:05:51","modified_gmt":"2012-01-14T07:05:51","slug":"something-goods-cookin","status":"publish","type":"post","link":"https:\/\/astrowin.org\/rffriends\/wpx\/?p=4049","title":{"rendered":"SOMETHING GOOD&#8217;S COOKIN&#8217;"},"content":{"rendered":"<p><strong><span style=\"font-size: small;\">Veggie Meatloaf with Mashed Potatoes and Gravy\u00a0\u00a0 <a href=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/meatloaf.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-4062\" title=\"meatloaf\" src=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/meatloaf.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/meatloaf.jpg 300w, https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/meatloaf-150x150.jpg 150w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>\u00a0<\/span><\/strong><\/p>\n<p><span style=\"font-size: small;\">(Serves 8)\u00a0\u00a0\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups \u00a0\u00a0\u00a0 prepared lentils<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups \u00a0\u00a0\u00a0 carrots, grated (one large or two medium-size)<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups \u00a0\u00a0\u00a0 onion, grated (one medium-size)<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups\u00a0\u00a0\u00a0\u00a0 water<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups \u00a0\u00a0\u00a0 dry bread crumbs<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2 cups \u00a0\u00a0\u00a0 shredded cheese (Monterey Jack)<\/span><\/p>\n<p><span style=\"font-size: small;\">2 \u2013 3 cups \u00a0\u00a0\u00a0 finely ground walnuts (6 ozs.)<\/span><\/p>\n<p><span style=\"font-size: small;\">2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 extra large eggs<\/span><\/p>\n<p><span style=\"font-size: small;\">1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tablespoon spicy brown mustard<\/span><\/p>\n<p><span style=\"font-size: small;\">1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 teaspoon dried thyme<\/span><\/p>\n<p><span style=\"font-size: small;\">1\/2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0teaspoon celery seed<\/span><\/p>\n<p><span style=\"font-size: small;\">1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 teaspoon salt <\/span><\/p>\n<p><span style=\"font-size: small;\">1\/2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 teaspoon pepper<\/span><\/p>\n<p><span style=\"font-size: small;\">1 1\/2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 tablespoons butter<\/span><\/p>\n<p><span style=\"font-size: small;\">Cover the lentils with an inch of water and boil for\u00a0five minutes.\u00a0 Cool and drain.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small;\">Peel the onion and carrot and cut into 1-inch pieces.\u00a0 Place in a blender with the water and pulse until the vegetables are finely grated but not liquefied.<\/span><\/p>\n<p><span style=\"font-size: small;\">Pour the blender contents into a medium bowl and add lentils, bread crumbs, and cheese.<\/span><\/p>\n<p><span style=\"font-size: small;\">Add the nuts, eggs, and the seasonings and mix well. \u00a0Add additional water as needed; it should be the consistency of \u201cmush.\u201d\u00a0 \u00a0Pour into a shallow, well-oiled ceramic or pyrex baking dish and dot with pieces of the butter, pressing them into the surface.\u00a0 Bake at 375\u00b0 for the first 15 minutes and 350\u00b0 for an additional 30 to 45 minutes.\u00a0 Serve with mashed potatoes and gravy.\u00a0 Use the leftovers for meatloaf sandwiches.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small;\">\u00a0<\/span><\/p>\n<p><strong><span style=\"font-size: small;\">Mashed Potatoes<\/span><\/strong><\/p>\n<p><span style=\"font-size: small;\">(Serves 4)<\/span><\/p>\n<p><span style=\"font-size: small;\">4 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 medium russet or Yukon Gold potatoes, peeled and quartered<\/span><\/p>\n<p><span style=\"font-size: small;\">1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 teaspoon salt<\/span><\/p>\n<p><span style=\"font-size: small;\">2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tablespoons butter or margarine<\/span><\/p>\n<p><span style=\"font-size: small;\">\u00bd\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cup milk or cream<\/span><\/p>\n<p><span style=\"font-size: small;\">Place the cut-up potatoes in a medium saucepan and add just enough cold water to cover them. \u00a0Add half of the salt and bring to a boil. Reduce the heat to medium; cover and simmer for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.<\/span><\/p>\n<p><span style=\"font-size: small;\">When they are done, reduce the heat to warm, pour off the cooking water and replace the pan of potatoes on the warm burner.\u00a0 Mash them with a potato masher until they are fluffy.\u00a0 Add the butter and milk and mash again, until they are of the desired consistency.\u00a0 Stir in the remaining salt and pepper to taste and serve with vegetarian onion gravy.\u00a0 <a href=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/onion-gravy.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-4070\" title=\"onion gravy\" src=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/01\/onion-gravy.jpg\" alt=\"\" width=\"252\" height=\"200\" \/><\/a><\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-size: small;\">Vegetarian Onion Gravy\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 <\/span><\/strong><br \/>\n<span style=\"font-size: small;\"> (Serves 4)<\/span><strong><span style=\"font-size: small;\">\u00a0<\/span><\/strong><\/p>\n<p><span style=\"font-size: small;\">2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tablespoons coconut oil, (or butter, or margarine)<br \/>\n1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 medium onion, cut in half top-to-bottom and thinly sliced<\/span><\/p>\n<p><span style=\"font-size: small;\">1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 dash of salt<\/span><\/p>\n<p><span style=\"font-size: small;\">2 1\/2 \u00a0 cups vegetable broth or water<br \/>\n4\u00a0 \u00a0\u00a0\u00a0\u00a0 tablespoons flour (or 2 tablespoons corn starch)<br \/>\nsalt and pepper to taste<\/span><br \/>\n<span style=\"font-size: small;\">\u00a0Caramelize the onion slices by saut\u00e9ing them in the coconut oil with a little salt over medium-high heat until the moisture evaporates and the onions\u00a0are a rich golden brown and becoming crisp, stirring frequently to prevent burning, usually 15 to 20 minutes.<\/span><\/p>\n<p><span style=\"font-size: small;\">Reduce the heat and make a rou\u00e9 by stirring in the flour.\u00a0 Then, gradually add the liquid, briskly stirring the broth until it is thick and bubbly.\u00a0 Another option is to first add the liquid to the caramelized onions, then stir in corn starch until it simmers and is completely blended and slightly thickened.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small;\">Optional ingredients for color and flavor:<\/span><\/p>\n<p><span style=\"font-size: small;\">Add 1\/2 cup of chopped mushrooms and a clove of garlic, minced, after the onion is browned but before making the rou\u00e9, saut\u00e9ing for 1 to 2 minutes.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small;\">This gravy tastes great with only the simplest, common ingredients \u2013 caramelized onion and water.\u00a0 Flour makes fuller-bodied gravy;
