{"id":4368,"date":"2012-12-10T23:28:30","date_gmt":"2012-12-11T06:28:30","guid":{"rendered":"https:\/\/astrowin.org\/rffriends\/wpx\/?p=4368"},"modified":"2012-12-11T00:14:32","modified_gmt":"2012-12-11T07:14:32","slug":"black-bean-and-vegetable-enchiladas","status":"publish","type":"post","link":"https:\/\/astrowin.org\/rffriends\/wpx\/?p=4368","title":{"rendered":"Black Bean and Vegetable Enchiladas for a Monday"},"content":{"rendered":"<p><span style=\"font-size: medium;\"><span style=\"color: #000000;\"><a href=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/12\/Enchiladas-000081.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft  wp-image-4370\" title=\"Enchiladas 000081\" src=\"https:\/\/astrowin.org\/rffriends\/wpx\/wp-content\/uploads\/2012\/12\/Enchiladas-000081.jpg\" alt=\"\" width=\"232\" height=\"164\" \/><\/a>\u00a0\u00a0\u00a0\u00a0<\/span><\/span><\/p>\n<p style=\"text-align: right;\"><span style=\"font-size: medium;\"><span style=\"color: #000000;\">Inspired by Amy&#8217;s frozen dinner, <em>Black Bean and\u00a0Vegetable Enchiladas<\/em>, (All of Amy&#8217;s frozen\u00a0dinners are great!),<\/span><\/span><\/p>\n<p style=\"text-align: right;\"><span style=\"font-size: medium;\"><span style=\"color: #000000;\">\u00a0\u00a0\u00a0 three would-be gourmets\u00a0taste-tested a copy-cat recipe that proved to be very good &#8212; almost as good as Amy&#8217;s.<\/span><\/span><\/p>\n<p><span style=\"color: #000000; font-family: Times New Roman; font-size: medium;\">\u00a0<\/span><\/p>\n<p><span style=\"font-size: medium;\"><span style=\"color: #000000;\">The\u00a0recipe is below, in case you do not have one for enchiladas or have never tried a mole sauce (a spicy sauce often containing cocoa, Mexican by design). <span style=\"font-family: Times New Roman;\">\u00a0<\/span>The cocoa powder mellows out the heat and other sharp flavors, and\u00a0this could be the secret ingredient that\u00a0accounts for the exquisite taste of Amy&#8217;s enchilada sauce. <\/span><\/span><\/p>\n<p><span style=\"color: #000000; font-size: medium;\">\u00a0<\/span><span style=\"font-size: medium;\"><span style=\"color: #000000;\">The only problem\u00a0we had was in keeping the tortillas from breaking when they\u00a0were folded around the finely diced vegetables. There may be corn tortillas available that don&#8217;t break as easily. \u00a0One recipe suggested warming and oiling the tortillas before covering them with sauce.\u00a0 That may help, but it would add calories.<\/span><\/span><\/p>\n<p><span style=\"color: #000000; font-family: Times New Roman; font-size: medium;\">\u00a0<\/span><span style=\"font-size: medium;\"><span style=\"color: #000000;\">Anyway, a really yummy vegetarian recipe without wheat or dairy is something to treasure.<\/span><\/span><strong><span style=\"font-size: medium;\"><span style=\"color: #000000;\">\u00a0<\/span><\/span><\/strong><\/p>\n<p><strong><span style=\"color: #000000;\">SAUCE<\/span><\/strong><\/p>\n<ul>\n<li>4 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tbsp vegetable oil<\/li>\n<li>1\/4 \u00a0\u00a0\u00a0 cup tapioca flour (or 2 tbsp rice flour)<\/li>\n<li>3 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tbsp chili powder<\/li>\n<li>1 \u2013 2\u00a0\u00a0 tsp cumin<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 tsp cayenne pepper, or to taste<\/li>\n<li>4 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 cups water<\/li>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 8-ounce can tomato paste<\/li>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 8-ounce can tomato sauce<\/li>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tsp garlic powder<\/li>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tsp onion powder<\/li>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tsp cocoa powder<\/li>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 tsp salt<\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">Heat the oil, flour and chili powder together in a large pot. Allow to cook for a minute or two. Add the remaining ingredients and bring to a slow simmer. Stir well to combine. Allow to cook for at least 20 minutes, stirring occasionally. Add more spices as desired. <\/span><\/p>\n<p><strong><span style=\"color: #000000;\">ENCHILADAS<\/span><\/strong><\/p>\n<ul>\n<li>1\/4 \u00a0\u00a0\u00a0 onion, diced<\/li>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 carrot, diced<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 zuchinni, diced<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 can black olives<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 red bell pepper, diced<\/li>\n<li>8 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 oz frozen corn kernels<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 block firm tofu, drained and cut into 1\/2 inch pieces<\/li>\n<li>1\/2 \u00a0\u00a0\u00a0 can black beans, drained<\/li>\n<li>10-12 corn tortillas<\/li>\n<\/ul>\n<p>Using a food processor for quickest results, finely dice the onion, carrots, zucchini, olives and bell pepper. To this mixture add the corn, tofu, black beans and 1\/3 of the enchilada sauce and combine well.<\/p>\n<p>Spoon 2-3 tablespoons of the vegetable mix into each corn tortilla. Roll them and place them in a baking pan, seam side down. When the pan is full, spoon 1\/3 of the enchilada sauce on top of the wrapped tortillas &#8211; being sure to\u00a0cover all of the edges!<\/p>\n<p>Bake 30-35 minutes at 350\u00b0 or until done, spooning the remaining 1\/3 of the enchilada sauce\u00a0over the\u00a0top, halfway through the cooking.<\/p>\n<p>Before filling, the corn tortillas may be oiled or dipped in sauce to soften them.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Meatless Mondays Catching On<\/span><\/strong><\/p>\n<p><span style=\"font-size: medium;\"><span style=\"color: #000000;\"><span style=\"font-family: Times New Roman;\">The San Francisco Board of Supervisors unanimously approved a meatless Monday resolution on Tuesday, April 6, 2010. The measure declared every Monday as &#8220;Vegetarian Day&#8221; and urged restaurants, grocery stores and schools to offer more plant-based options. The city by the bay known for touting innovative cuisine and healthy lifestyles became the first Meatless Monday city!
